Avocado oil has a light, but unique flavor that makes it an excellent choice for salad dressings or for use as a condiment. Refined avocado oil has the highest smoke point of any plant oil (255 C), so it is useful for high heat cooking. It can be infused with lemon, rosemary, basil or chili. It is a good source of monounsaturated fat and vitamin E, which makes it nutritionally beneficial. This unique, nutty-flavoured oil may be used in whipped potatoes, drizzled over steamed vegetables, in vinaigrette dressings, for sautéing, soups ands stews.
